    Hi Legion-ers! It's Friday which means...... time for a Legion Fridays activity!

    For those who don't know, we will have 1 activity every Friday, posted on the Legion Fridays board, and 5-6 winners will be announced at the end of every month!

    Few games could achieve that formula take for example: Battlefield 1, Red Dead Redemption 2, Ghost of Tsushima...etc

    Ingredients:
    1 tbsp olive oil
    1 cup diced yellow onion
    1 tbsp minced garlic
    1 can chickpeas rinsed and drained
    2 cups cherry tomatoes
    1 cup diced zucchini
    16 oz orzo
    6 cups water
    1 cup frozen peas
    2 cups chopped spinach
    1 tsp salt
    1/4 tsp pepper
    1 tsp garlic powder
    vegan Parmesan

    Instructions:
    1. In a large pot on medium heat, sauté onion, garlic, tomatoes, zucchini and chickpeas for a few minutes.
    2. Pour in the orzo and water! You can start with 4 cups of water and then add 2 cups more if the orzo still isn’t tender.
    3. Turn stove and medium high and stir every 30 seconds until all of the liquid is absorbed. When it’s almost done, add peas and spinach.
    4. This should take about 10 minutes! Taste orzo when the liquid is absorbed and make sure it’s tender to your liking.
    5. Season with salt pepper and Garlic.
    6. Sprinkle on vegan Parmesan and enjoy!
